Knowing this has made me switch back to the stuff many of us used before shredded cheese was introduced.

Now, I am not saying that pasteurization is bad. It saves lives. But I am willing to "risk" it, because my nose works and I know bad milk. Also, bad milk is good something else. If you know what you're doing.
Grated cheese has lots of "stuff" in it - perfectly legal cuz your gubmint loves ya baby - to make it NOT lump, clump, or otherwise behave in a cheese-like manner. Wooden want your cheese acting like cheese amirite?
It isn't hard to keep food on the real side - it's actually cheaper than processed ****. And better. And anything you CAN buy from your neighbor, you SHOULD buy from your neighbor - eggs and dairy and meat and such. If you can produce some of it yourself, all the better.
