Can only speak for my area. Was looking at starting a food truck as a hobby business, found they require three part sinks regularly tested with logs kept. Additionally all food had to be prepared in commercial kitchens. Surveyed a few dozen trucks, most ignored these guidelines. If they are there they should be enforced. Don't believe a person interested in enforcing existing regulations has a conflict of interest.
