So, it would be interesting to explore this. If it is sinking then there would be evidence

The biggie would be an uneven effect if it were sinking. Some parts would be at a different level.
Ocean rise would be the same from one end of town to the other.

NYC has to pump about 10,000 gals. per minute just to keep the pressure up at the faucets and hydrants.
In other words, there are so many leaks that if every single spigot was off, they would still pump that much.
