The counting of ballots is not HIDDEN.  It simply occurs in a controlled environment, as opposed to out on the windswept front lawn of the town hall.
 
You have a right to cast your ballot and you have a right to have your party have representatives present to witness the counting of those ballots.  You, individually, do not have the right to barge, uninvited, into the place in your town offices where votes are being counted and disrupt the counting process.  

Similarly, you do not have the right to barge into a jury room and watch a jury deliberate over the fate of some criminal, regardless of how attracted you are to him.  

When the counting is all done, they'll come out and let you know the tally... and when the jury reaches a verdict, they'll let you know how long your lover will be in jail for **** the family pet, or whatever your paramour does that earns your undying devotion.

Counting ballots is never done in the public arena.  Poll watchers are there... from both parties.   If you don't LIKE that, then you should run for a seat in your local town council and propose legislation that makes the counting of ballots an open event where all are welcome.  

Let me ask you this three-part question:   
1.  have you ever served as a poll worker tasked with counting ballots from municipal/county/state/federal elections?
2.  have you ever served as a designated poll watcher for a political party tasked with observing the counting of ballots by those aforementioned poll workers?
3.  have you ever gone on down to your local town hall on election night, walked into the space where those aforementioned poll workers and poll watchers were doing their jobs, pulled up a chair, opened up a bag of popcorn and just watched the show?
