Small farmer here. I’ll sum this up real quick. Big ag gives big money to politicians who vote against bills that would help small farmers. It’s illegal for me to process an animal and sell it off our farm. We are forced to take to a USDA facility where a USDA inspector stands there while the animal is put down then they go back to their off. This adds cost and in our case there is a single processor with a 100 miles. The death tax makes it all but impossible to pass off land and assets. Your neighborhood was once someone’s living. Lastly it y’all. You want 3.99 hamburger, we can’t produce it for even close to that- 4 processors control 70% of the beef market and they don’t compete with each other but keep it low enough to undercut local farmers. BTW that steak that was stamped USDA was more than likely raised in South America- the slab is stamped once it enters the US. Fun fact. Cattle farming is the leading cause of deforestation of the rainforest. Some 80%. Getting locally produced beef is about the greenest thing you can do to help the planet. Not to mention our cattle stay on grass until the very end. No feed lots, no crowded pens, no stress for the animal. USDA needs a serious overhaul.

Many years ago I went to DC for the first time. Actually quite an interesting little trip.
One thing impressed me: the Department of Agriculture building.
It is **** huge. All I thought was, "How many micromanagers do we need for this ****?"

I get free tongue, tail, heart and liver from several different mom and pop processors (non USDA) in my area. They are legally constrained against selling it, so they give it away.

The heart and liver are mostly for the dogs and chickens (I will cook liver and onions occasionally, but not at anything near the pace at which I acquire them). The tongue is mostly for me - I consider it one of the best parts of the cow. Everyone likes the tail. It goes for 8 bucks a pound in the supermarket. 

IF I HAD MY WAY, this would not be happening - happy circumstance though it is for me. But it is happening, and it is happening for a reason. Capitalism locks competition out of the market, using the government gun. Well, if life is going to give me those lemons, I am going to make lemonade. By the way, the beef is top quality, as the people who raise it are raising it for themselves and their families, on grass and not in feed lots, using old school stewardship.

I cannot find fault in your reasoning, except for two:

1) I despise liver - yes, it's the most nutrient dense part of the animal (something "carnivore diet" hipsters will always broach), and it also processes all the waste of the animal. It's like adding radioactive saltwater to your heavy metal detox smoothie. 

It has a "metallic" taste FOR A GOOD REASON.   

2) Using Marxist theory, the monopolization/oligopolization of farming was INEVITABLE. Even had "Big Ag" been barred from the halls of Congress, there would still be an ongoing effort within the "free market" to consolidate everything under - as the DNC might say - "A BIG TENT [HOMO/***] PARTY!" 

 

Now if you say this wasn't the case back when the Phoenicians were trading with the Hittites, I will reply: 

1) Capital has accumulated at a pace unseen in human history since the 1800s, so you can't compare the modern era "free markets" with "free enterprise" of the past

2) Kings actually cared about their subjects' welfare [ contrary to lies by the (((usual suspects))) ] so any effort to monopolize farming would have been thwarted by the monarchy in 300 BC.

Any king stupid enough to let the peasants fail to provide for themselves/their families and earn a modest profit would likely not last more than 2 generations.

Today, the (((bought and paid for))) representatives will tell people to LEARN2CODE / "learn a trade" / go on welfare / some other stupid ****.

I dont think you exactly understand a farmers "upfront" co$t versus ever changing commidities prices on the markets.

When a farmer takes out annual loan for the operation theres alotta fixed co$ts
to plant crops & raise cattle.

When prices are good ya make money.

If the prices drop ya still owe what ya borrowed from the bank.

Even sometimes at better prices your Co$t went way up more.

 

Big AG is a problem too they squeeze out the Mom & Pop operation in volume.

Initially just like Walmart but as they consilidate , buy up , or drive more outta buisness prices are lower but then they put the squeeze on ya..

Take Walmarts Grocery Section sure their cheaper for canned goods, packaged , that kinda stuff..

Fresh stuff and Dairy ya could actually do better at Piggly Wiggly or your "Local Supermarket"

But Walmart knows they already got ya there for the rest of it so youll pay more for Dairy , Produce, & Meat have ya thinking ya made a killing on rest of stuff..

To be "Fair" Butter & Eggs are better deal at Walmart but eh "Loss Leaders"

As corrupt as the system is they have maintained a pretty good safety record.
What confuses me is why they allow fast food chains to mash together train car loads of hamburger from different places of origin..making it impossible to quickly tell where tainted meat came from.
