you're correct...never been a hunter or worked in a slaughterhouse...which I assume they butcher straight away...
a friend out of Highschool worked for a hot roofing company...they were reroofing a local slaughterhouse and sitting on the edge having lunch...he said a full, top open tallow truck pulled out of the building directly beneath him..the sight and smell was enough to put his lunch away and get back to work..
The meat is "Tubbed" and loaded into a Big Rig for Further Processing and packaged then the trucks loaded again with "Finished" packaged meat and to Grocecry Wharehouses and Distribution Centers..
Now back in the day Southside Milwaukee in the "Valley" was Embers Beef "Empack"
Was a stockyards and cattle bid & sold then trucked em the Kill Floor and Processing they grinded and packaged Hamburger
Cargill International Bought them out Still a plant and distribution center operation but stock yards are gone and no Slaughtering at that Facility today..
Oak Creek or Franklin south suburbs of Milwaukee is "Strauss Veal" Company..
It was thru a Temp Service like 20 years ago they trucked in "Live" Calfs knocked em out then hung the carcasses on chains and the Mexicans would slash off the hydes for a Leather Factory and gutt em then the meat went next door become "Veal Chops"
