Those have some excellent fat and collagen in them. That buck will never have joint issues. I just have ethical issues about eating swine. The pig is not in any contract with humanity to be a food animal. I mean, the damned thing got itself on the do not eat list of every major religion. He DOES NOT WANT to be in the pot. Beeves, chickens, goats - these animals will pretty much march to the slaughter house gates on your command.
But the big thing that kind of **** the pig over in the deal is bacon. I mean, we all know. Even kosher **** like themselves some bacon. They can pretend that mutton stands up to it, but who are they fooling? No one.
Me, I find that cow tongue sliced thin and refried is as close as it gets to replacing bacon. Many a time I've chosen tongue and eggs when bacon and eggs was an option.
