actually... the clarified butter really works better with a whole lobster that you open and eat as part of a shore dinner.... a bowl of steamers, an ear of corn and a lobster with lots of cold beer. Butter dripping off a lobster roll makes it tough to eat. We like to pick up a half pound of picked lobster meat, add just a small amount of mayo, and some chopped chives, and let any butter join the show toasted onto the bun.
