In the 21st century alone, many of the mathematical breakthroughs that we use in AI and neural networks were teams of Islamic researchers. I work with those breakthroughs in my own work. In fact, American computer engineering companies work closely with KAUST (King Abdullah University of Science and Technology). They are one of the top universities in AI. Many STEM related industries are filled with Islamic scientists. Not to mention their work in chemistry in medicine.
