USDA won't let folks sell their meat without a stamp, so whatever the meat processors' customers don't want, I can ask for. They can't sell it, either. I give their slaughter guy free slop that I have a connection for.
I concur about the oxtails, but I've never tried any beef tongue. I remember the episode of Sanford and Son where Fred was boiling a tongue in a pot... and he kept using it to lick whole sheets of green stamps.
