I read somewhere that the reason there is so much gluten sensitivity today is that gluten feeds viruses inside the body, and once the viruses become more active or numerous they cause mystery symptoms. This causes people to erroneously attribute their woes to glute

If these hidden / unidentified (I would add - purposely unidentified) viruses did not exist, gluten would not be a problem.

When gluten is taken out of the diet, people tend to improve on inflammatory markers (like the C-reactive test). This has always been one of the great mysteries to alt. health professionals.

Going back to 1930, many of the alt. health practitioners of that era observed that when bread (a staple) was taken out of the diet, poliomyelitis became less severe. They surmised it was due to "sugar" (as carbohydrates convert to "sugar") but this was quickly disproven as eating fruit had no negative impact.
